Goodfellas and Pulp fiction spring to mind, but for me there is one that sticks out, and possibly not an obvious one, but you'll know it...

"I guess you guys aren't ready for that yet...but your kids'll love it"

"Marty...that was very interesting music..."

"Let's see if you bastards can do 90. "

"don't be silly...no one has TWO TV's..."

I think some other very quotable movies are:

Off the top of my head, I'd have to say O Brother, Where Art Thou? is the single most quotable movie I know. Tons of funny lines there.

They Live would be my runner up. Smokey and the Bandit (the original) would be high on my list as well.

Perhaps no one mentioned it yet because it's not politically correct, but what about Blazing Saddles (http://www.imdb.com/title/tt0071230/)?  My friend Mike and I can practically quote the entire movie from memory (at least the joke lines).

"Badges? We don't need no stinking badges!"   ---Just about the only family-friendly joke in the movie, which is unfortunate because unless you get the reference (http://www.imdb.com/title/tt0040897/) it's a pretty lame one

For me, the two most quotable movies are Monty Python and the Holy Grail, as has been mentioned, and Strange Brew. In college, some guys were watching SB, and they kicked me out because I was reciting the dialogue along with the movie. I just couldn't help myself. Star Wars would be another; Ep. IV would be my first choice, but Empire & Jedi each have some quotable moments. To this day, whenever I am driving through an area with road construction (where the concrete barriers are up on either side of a one-lane passage), I can't help but annoy my wife with "Use the force, Luke" or some other Death Star quote.

Monty Python is high up on my list, and probably the film that I quote the most.  I also echo everyone's choices but I must add:

The Big Lebowski.

I can quote that film endlessly.  There is not a time in my house that the phone rings that I don't say "Phone's ringing dude..."

You are correct sir, I read the title of the thread and said ... "A duh the HOLY GRAIL"

It is one of the few movies you can quote that MOST people will know the quote right off.

Not a quote, but with all the Holy Grail referencing going on in this thread, I simply had to note that the wife and I made a pilgrimage to Castle Doune in '05 -- The film site of a good 80% of the Holy Grail.
It did triple duty as Castle Anthrax, the castle of Louie LaWunder, and the castle where the wedding is taking place & John Cleese explores his idiom.
If you stand off to the left of the castle & sight along the wall, you can see the scene of the Trojan Rabbit spring to life in your mind's eye.
Plus they filmed the Knights of the Round Table dance number in its great hall.  Every turn you take inside Doune can make a scene appear.  It's magic!!
Castle Arrgh! is just up the road a piece, near Oban, but it's privately owned & you can't go inside or even sail out to the island it's on without permission.  Looks great, though . . .

The Big Lebowski and The Holy Grail bring many a quote to my head.  What about Army of Darkness?  There's a plethora of quotes there.  You peeps know the movie though.  Ghostbusters has always been quotable for me:

 Andrew is right, that movie is a long time favorite..."The Vikings". I think you can get it on Amazon for about 10 bucks. It's a real Guy Feel Good Movie. One of my favorite lines is ..."Love and Hate are horns on the same goat." I won't say any more, you have to experienc it for yourself.

I love the whole "Conan the Librarian" sequence.  I'm quite fond of the "Ghandi 2" sequence when he starts acting like Shaft and he beats up some punks in the alley.  He's like, "Don't move, slimeball!"
