no offense, but that's pointless article that actually doesn't teach you anything the directions on the bag don't tell.
 a real cooking tip-don't waste you money on a meat mallet. get a rubber mallet from any auto parts or hardware store instead, preferable double ended.
  it's far heavier, the surface has more curve and diameter and it's useful for other stuff too. score one side with a 1/2 inch crosshatch about 1/2 inch deep, et voila, that's the tenderizer side.
  * an addenda-always cover the meat with plastic wrap while you'r working it, so it doesn't spit meat blood everywhere. you also won't need to wash the mallet and disinfect it, saves time and money! *
