I think this was an Aussie movie, maybe even a post-apocalyptic, but it was very odd.  I'm also sure it was supposed to be something of a parody on the post-apoc genre.  At least I remember finding it kind of funny.  This would be an 80s movie.

There were two guys, one of whom ALWAYS wore sunglasses, driving a big rig through, I swear, the jungle, or at least a dense forest.  There were no roads, or even trails, they were just driving through the forest/jungle.  They stopped for some reason and were attacked by cannibals.  They got away from the cannibals and drove some more, reaching a spot with a waterfall and a house.  They looked through the house and were attacked by zombies, or possibly mutants.  These mutants looked a lot like the villains from "Ewoks: The Battle For Endor".  Or at least that's how I remember them.  (Maybe this movie was using the leftover costumes?)

That's really all I remember.  It occurs to me that they may have been driving one of those half-track vehicles, not a big rig.  I also want to say there was a girl with them at one point, but I'm very unsure about that.

I could have sworn that the people who were involved with "Warbus" made another, very similar film (that I have never seen), but I couldn't find it during an IMDb search.  However, I don't think it would have involved mutants.

"Empire of Ash" and "Battletruck" are two you might want to check.  In fact, I'd recommend browsing through Nate's site (he has reviews for both of those, too):

After reading the review and looking at the pictures, I'm almost certain "Empire of Ash" is it.  I'll have to try and find a copy.  Thanks, Andrew!  I thought this one would be a mystery for all time.

Move this one to "solved".  I finally got a copy of Empire of Ash and the majority of what I was remembering was from it.

Thanks, Andrew!
