Jeffrey Jones as a hunter?

I honestly cannot remember the title or the main plot of this movie. I know it was a fairly recent (comparatively speaking) flick, as I saw it in a theater. But I remember Jeffrey Jones was the bad guy, a sort of Count Zaroff type who hunts the hero on his private island before chasing him to the mainland where he gets mobbed in a gay bar (!) by a bunch of guys (including his own henchman) after getting doused in some kind of pheromone.

I know I'll feel dumb when I find out the title but lately I've been replaying the hunting scene in my mind, where Jones is being served a martini in the jungle and he throws it away because it's "not dry enough," and I've been wracking my brain trying to figure out what movie that's from!

Yeah, that's it. I recognized the name of Jones' character Gustav's henchman, Leo. And, wow, 1997? That long ago? Yikes!
