Pretty much every boss fight in the original Nightmare Creatures had some butt-kicking music. Actually, the whole soundtrack was pretty cool, but the boss fights were the coolest.

Keep in mind, I'm posting this right now on a computer with no speakers, so if the following video has crappy audio, or none at all, I'm sorry. I'm just posting what I guess/hope is the right tunes.

Man O man! Did I love that game! It was sooo cool, even though the controls were quite sluggish and there were a few glitches. You can't hear the music that well on that vid Bill, it doesn't seem to feature the "NC theme" track on it either.

I also always thought that Shibobi 3: Return of the Ninja Master for the Sega Genesis had some catchy musical themes.

I always liked the NES game Willow (based on the movie). It was a complete Zelda ripoff, but the game was lots of fun, and the music was catchy.

I've never really played Chrono Cross (I guess I should since I adore Chrono Trigger) but its soundtrack is superb:
