Lets hear what everyone puts on their Nachos. I like Steak nachos with Black beans, , onions, tomatoes, sour cream, guacamole, cheese, and black olives, maybe jalapenos.

I'm a bit of a lame traditionalist, cheese and salsa. I particularly like that god awful watery cheese most people use with mac n cheese.

I like to make my our mix of stuff, a kind of homemade sloppy joe recipe. 

Basically, I use tomato soup, ground beef, along with a bit of liquid smoke, Italian seasoning, chilli and garlic powder.  Then I add shredded cheese and lettuce.

(Some people like tomatoes, onions and green peppers with it, but that's not my thing.)

Man, now I'm hungry...

My homemade nachos usually have finely chopped green onions, bits of crispy bacon and black olives, smothered in cheese (either old cheddar or a blend of cheddar and pepper jack). I like them with sour cream and salsa, with a healthy dash of chipotle sauce.

The wife and I will sometimes have this for dinner, I don't really think it's a healthy well balanced meal, but it sure goes well with a beer and a movie.

I'm a huge fan of tex-mex food (not so much mexican since they cook a lot of fish and seafood). And just thinking of nachos makes me want to go make a quesadilla. What sucks is there's really not that many mexican restaurants around my apt. that's sad since i live in texas. On the border or taco cabana is ok but usually it's those family run joints that have the best food

although i used to love panchos because their food was cheap. unfortunatly most of them shut down here, probably because all the la cugarachas..lol

I went for simple: refried beans and cheese, since that is the way I normally fix nachos (my wife and kiddo don't generally go for the salsa or lettuce and tomato varieties. My daughter adds a really bland guacamole (mostly just mashed avocados with a tiny bit of chile powder and some peppers), but for quick and easy, we all compromise on beans & cheese.

And Susan, down here (South Texas), there's a tex-mex restaurant on every other corner. Some are better than others, of course, but I agree that it's the mom-and-pop restaurants that are the best; I count places like On the Border and Taco Cabana as fast food joints more than mexican food restaurants. And not to laugh at your mistake, but it's cucarachas. I only mention it 'cuz I'm gonna steal your spelling and modify it to cougarachas to talk about the size of the little beasties down here; they can be vicious critters, dive-bombing me from the ceiling when I spray them TeddyR. But Panchos was pretty good, or at least the sopapillas were.

Yeah I have family in san antonio so they definately have good food and not only that but better mexican food in the grocery store, fresh made tortillas and all that. Everyone in dallas just wants to eat healthy or just eat all the chain food like chili's. I can't spell, don't you know that by now? ;-)  Panchos was good for cheap food, and yeah the fresh sopapillas were definately tasty, the guacamole wasn't half bad either.  don't know if they have one of These in south tx but they're not half bad. I just wish i had something within a 5 minute drive

I know all about "cougarachas" btw, i lived in the tropics and they used to clear air space for them.

Pancho's sopapillas... now that takes me back.  They were quite a treat when I was growing up as a kid in the Houston area.
