I love it when a character appears in a movie for a few seconds and walks off like nothing ever happened.  One of my all time favs was when Big Bird popped into the Muppet Movie for a few seconds.

Well, any of the Alfred Hitchcock cameos are good.

Also, apparently R2-D2 appeared in that Star Trek remake.  Never spotted him though.  That would have been kind of interesting.

EDIT:
I found him:

Col. Sanders (and his Kentucky Fried Chicken) in a few Herschell Gordon Lewis movies.

Robin Williams as Dr 'Cozy' Carlyle in Dead Again ~ he's sitting in a walk-in freezer when Kenneth Branagh comes in and says:

KB: "Cozy Carlyle?"
CC: "**** you, I'm on a break."

I don't know if this qualifies, but I loved the very large set of breasts that shaked their way onto the screen in the original Airplane for few seconds. Don't know who the actress was, but she's my favorite very brief cameo.

I quite liked the little cameo by Weird Al Yankovic in Rob Zombie's Halloween 2, starring in a scene with Malcolm MacDowell as Dr. Loomis.  Loomis meets him and goes "Good to meet you, Mr. Weird."  Then Al makes fun of him trying to stop "That guy from Austin Powers from killing"

Jay and Silent Bob in Scream 3.  There's a scene where they are taking some sort of movie tour at a Hollywood Studio, where they're filming the movie "Stab 3" based off of Scream 1 and 2.  Courtney Cox gets thrown out as the tour is happening, and Jay goes, "Holy sh*t, Silent Bob, it's Connie Chung!"

Wes Craven in Jay and Silent Bob Strike Back.  He plays himself as the director of Scream 4, where the killer is apparently a monkey, cause "People love monkeys."

Ben Stiller and Tim Robbins in Anchorman.  There's a big "Anchorman Rumble" between all the local newsanchors, including Will Ferrell, Steve Carell, Luke Wilson, Vince Vaughn, Stiller and Robbins.

Roger Clinton, Stephen Baldwin and Frank Stallone in Fred Claus.  Vince Vaughn joins a support group for guys jealous of their siblings achieving better things than them.  Roger is mad at Bill for being president, Stephen of Alec for being a better actor, Frank at Sly for well, being Sly, and Fred of Santa for being Santa. My absolute favorite cameos are in Police Squad!  They all get killed during the opening credits!
