I am also sometimes impressed when I see a movie and then I see the extended cut and the editing of the scenes that were cut out of the longer version is seamless.  Not that this movie has great editing, but I was surprised at some of the stuff that was cut out of the full version of DAWN OF THE DEAD.  The scenes still fit together nicely without some of the fluff.

It might help to watch some movies that have multiple versions: director's cuts and such. Or just watch the deleted scenes on DVDs that have them. You'll likely find that the deleted scenes were deleted with good reason, and that some cuts of the film are better than others. When you decide what makes some cuts better, you'll have criteria for evaluating editing.
