Just wanna throw in two anime that I remember being pretty gory and violent...Ninja Scroll and MD Geist. You could also mention Kill Bill Vol. 1 with the Battle against the Crazy 88. Even though it was in black and white (with the japanese version being in colour) it was very bloody.

Kill Bill Volume 1, Battle Royale, Dead/Alive, Saving Private Ryan and Schindler's List all come to mind

Tough one as I've seen a ton of violent rubbish.  Probably Braindead/Dead Alive for pure blood content.

Heh yeah, Wolf Creek 2 was a lot more graphic than the first one - I feel like unfortunately the way the market is for those type of films it maybe had to come back a lot more violent instead of psychologically intimidating (which personally I think it still is) which the first one mastered at.

Raid Redemption I think I may have to rewatch, I don't remember it being overly graphic just having intense stunt direction re: fight scenes.
