And no doubt keeping down the squirrel or urban terrorist, as thy are also known on this board, population. Brunswick stew originally was made with squirrel or opossum or rabbit. Now it is most often made with chicken. The old days were better.

I can't say that I have ever had squirrel or opossum, but . . .?! I have had rabbit in Dublin (Ireland.) It tastes like chicken.

I disagree with that.  The rabbit I've had was dark, very unfatty and not like chicken at all.

I've had (fresh) copperhead; found that to be of a flavor and consistency of fish.

Never had possum, though.  Wouldn't mind trying it.  Learned recently that are people that eat coyote, so we are contemplating trying that as well.

Not sure what "nummies" are, so I don't know if I am answering the question.   :teddyr:

I think it depends upon the rabbit. The rabbit I had was very white meat and lean, which was just the opposite of what you had, so I can understand why you disagree.
