Can anyone recommend a healthy low fat way to cook eggplant? I planted the smaller variety and I'm just about ready to pick them. I was thinking of stuffing the eggplant and baking it. Someone told me to mix the pulp with the stuffing. However the variety I have may be a bit too small for it. Any ideas would be appreciated.
2 lbs Halibut Filets, 3/4 inch thick
3/4 cup grated parmesan cheese (get a brick and grate it yourself, not that canned crap)
3/4 cup of mayonaise
1 small handful of black walnuts, chopped.
Preheat the oven to 425 degrees
Set aside a small portion of the parmesan cheese.
Mix the rest of the parmesan cheese with the mayo and the walnuts.
Cover bothe sides of the filets with the cheese/mayo,walnut mix and lay them single layer in a baking pan.
Put remaining mix on top of fillets.
Cook for 13 minutes uncovered, sprinkle the parmesan cheese you set aside on top, and cook for another 2 minutes.
Sorry I don't have any eggplant recipes, but I figured since we're in the off topic board. . .
You can also coat them in oil and spices (Italian Seasoning is fine, I use Za'artar (http://en.wikipedia.org/wiki/Za'atar) it's a middle eastern spice) and grill them. I use either Olive Oil or if you do not want to flavor of oil use Grape Seed Oil, both healthy oils.
However, I'll be trying ghouck recipe, sound good.

Julia Strain likes eggplant and has two nice ones growing right above her garden. Really eggplants are healthy for you, really, really healthy ... big firm and healthy ... bouncy healthy.

I really wish you would quit beating around the bush. Let us know how you really feel, I'm just not getting where you stand on this. Do you like them, , or not, , I just can't tell :bouncegiggle:
