Chet Atkins, Hendrix, Zakk Wylde, Van Halen, Stevie Ray Vaughan, Slash, Pete Townshend, Randy Bachman, um... um... Jade Puget?
I really like Michael Schenker, as well as Vito Bratta from White Lion. Both have an awesome mix of melody and technical wizardry. Troy Stetina can really put together a mind blowing solo as well.

Thanks for mentioning these guys :-) They're among my favorites, too. That is, I really like Phil Collin's solos although I don't listen to Def Leppard that often.
I forgot to mention Gregor Mackintosh (Paradise Lost). Big influence on my own playing. He's not the most technical guitarist out there, but he has a great tone and he's got a real knack for coming up with really simple, melodic lines and solos that tug on the heartstrings. Also, there's nothing like Tommy Victor in his prime (say, Force Fed up to Rude Awakening) - easily one of the most underrated, killer rhythm guitarists around.
Lindsay Buckingham
Dick Dale
Jim Croce
Nancy Wilson

OK, I've posted that one a few times before, but I love that performance. Here's a good one I don't think I've posted before:
