Had a brunch with the in laws. Not bad although the bacon was undercooked. I did like how they prepared the scrambled eggs fresh.

It was awesome, so awesome that I had another just like it.
Close-up of Ambrosia salad I made on Sunday for our picnic

My cam takes awful pics. It really looked more appetizing and tasted yummy. I use marshmallow fluff and cream cheese in my dressing :smile:
In case anyone's wondering, I served the Ambrosia in chocolate waffle cones.
We had our usual all-day eating marathon, beginning with:
BRUNCH:
* Prosciutto pie (sort of like a thick quiche with eggs, prosciutto, and cheese)
* Hard boiled eggs
* Honeydew melon
* Cantaloupe
* Strawberries
Followed by:
DINNER:
* Ham
* Lamb
* Rabbit (2 styles: 1 cooked in oil and vinegar, the other cooked in a marinara sauce)
* Roasted potatoes (cooked in the juice from the lamb)
* Salad
And finally:
DESSERT:
* Cake (shaped like an Easter Bunny . . . my mother makes it every year)
* Cookies (homemade . . . mom again!)
* Coffee
We had ham though I must confess I find it odd to celebrate the resurrection of Christ who was more or less a practicing jew by eating ham. I also find ham, bacon and sausage bagels kind of funny in a similar way.
I had brunch.. biscuits and gravy, ham, waffles, razzleberry pie and ice cream.
