Here's the ship's brewery. And no, Neelix does not assist in making of beer. Not since the unfortunate incident last year when Neelix served his Old Talaxian Light and everyone who had it spent the next three days in the bathrooms. Which resulted in the ship's waste treatment system becoming non functional for a week.
