Tough question. I think I gotta say Mothra. She was usually outclassed and outgunned by other kaiju but always fought her hardest, and only fought to protect things like her young.
On the hero side, I like Angurius and Rodan.
Villain side. Showa Era favorite is Gigan. He's got an interesting design. He's a cyborg, has a blue/gold color palette and is covered in blades. He's a 90's comic character that debuted in the 70's.
In the Heisei era-I would say my favorite was Biolante. One of the more unique monsters of that era.
