It was probably many years ago latenight on Cinemax and I vaguely remember it. It was about some man inviting this other guy to his house or island and he was hunted down as a game or sport. The only other thing I remember about it was chess.
That sounds like "Surviving the Game" starring Ice-T & Rutger Hauer...I may be wrong though.
A pretty good film I think....been awhile since I last saw it...at least a couple years.

No I don't think that's it, this was lower budget and didn't have any recognizable stars to me. I would say it was late 80's/early 90's.
Another one I was thinking of was "Hard Target" starring Van Damme.
Not sure if that's it.

It's definitely one of the innumerable remakes of the short story "The Most Dangerous Game" by Richard Connell. Just look that title up on IMBD until you find one with familiar looking actors. There're about a billion different movie versions of that story.
