I got the bird in the oven, stuffed and seasoned, about 9 o'clock. I peeled the tatars. and put them in water on top of the stove.
All the cans of veggies (yams, corn, greens) are on the counter. I may run out of butter.
But I think I got enough for biscuits! We'll make it!
Tiana is gonna make green bean cassorle (she don't do french cut beans-she uses just plain cut green beans-it's so good.)

That sounds really good.

I should actually start cooking but it's just me and my mom, and it's a smaller bird that only takes about 90 minutes to cook.  Not sure if I wanna do it for lunch or an early dinner/late lunch.

Spent all night on the damn chicken enchiladas-- baking the chicken (over an hour), shredding it, mixing up the soup base, soaking the chicken in broth, cooking the rice, chopping the onion, putting it all together in 2 separate dishes and baking them each an hour.  Gonna be tired as hell.
