Godzilla vs. Mechagodzilla: Godzilla and a giant shi-tzu fight a robot.

Godzilla vs. Megalon: Godzilla and giant robot (who programmed himself to be bigger!) take on cyborg tag team of giant bug and Gigan. One of my favourites.

Gamera vs. Guiron: Giant acrobatic flying turtle fights knife-faced giant critter that throws ninja stars. Meanwhile, two children are menaced by a pair of donut drugging, head shaving, brain eating space babes. Weirdest of the Gamera movies, and that's saying something.

That"goofy CGI sheepdog thing"was supposed to be Satan.

I know it was Satan, it just kind of failed to instill the sense of ultimate evil and all-around scary monstrousness you'd expect from the Lord of Darkness.  Mainly because it was a goofy CGI sheepdog with an immobile mouth.

I have always liked the part of "Godzilla vs. Mothra" (1992) where Godzilla was attacked by a futuristic armored force, complete with helicopters (which had no rotors) that fired beam weapons.

There is also a neat scene in Terror of Mechagodzilla where Godzilla bum rushes Titanosaurus and Mechagodzilla.  He shoulder blocks the big dinosaur out of the way and Titanosaurus goes flying, then slams into the robot monster just as it blasts some jets from the sky.

And who could forget the cyclops fighting the dragon in "The 7th Voyage of Sinbad?"

One fight that fell flat, but was a cool idea, is the two skeletons battling at the end of "Dr. Mordrid."  I think one was a mastodon and the other a tyrannosaurus rex.

The Gamera/Gyaos(es) battle midway through Gamera 3 is, bar none, the greatest giant monster melee ever.
