How do you take your eggs?

Since theres so many options I was too lazy to make it a poll but how do you prefer your eggs?  Nowadays I prefer my eggs hard boiled and I mainly eat the egg whites to save on the cholesterol.  I also cook up egg whites in a pan once and awhile for a somewhat healthy turkey bacon and egg sandwich.

If I were to go out and eat bad a place like Denny's, I'd probably get them done poached. I like the yolk runny if I eat it.  Its good for dipping toast in I find.

My latest recipe is 2-3 eggs, a pinch of salt, some minced garlic, a palm-full of shredded cheddar and a bit more than a palm-full of shredded mozzarella. This can be served as an omelet or scrambled. It's really quite tasty, and it keeps you feeling full most of the day. I like it with some bacon, toast and milk. I generally eat it before starting what I know will be a busy day, because many times, when I get really busy, either lunch or dinner gets skipped (not healthy, I know).

Fried in extra virgin olive oil and then draped over a nice Irish potato farl.  :smile:

OK, seriously.  My usual choice is 3-4 eggs as an omelette with cheese, ham, mushrooms, green peppers, onion, and sometimes tomato - everything diced, except the mushrooms that are sliced.

Nuked in a coffee cup makes the perfect size/shape for putting on an English muffin or bagel, or even a bisquick biscuit. Add some fried ham or bacon, some cheese and some salsa! yum

A few fried, or even eggbeaters fried in a small skillet, then folded in half makes it the perfect size and shape to put on a croissant, along with bacon, cheese, salsa.

I like them over easy, on top of some hash browns or corned beef hash.

Eggs Benedict is always good if they use decent hollandaise sauce.

I often make omelets by sauteing some onions, mushrooms, ham, and cheese until the onions are cooked, then add a bunch of eggs. Not really an omelet, more like scrambled eggs. Sometimes I use imitation crab in it, and sometimes roll it up in a tortilla with some salsa.
Raw bacon is GREAT! It's like regular bacon, only faster, and it doesn't burn the roof of your mouth!

First I prefer brown eggs they just taste better. We have our own chicken so we have a lot of eggs and farm fresh eggs are far better they the store bought ones, so find a farmer that sells eggs and try them.

Any style really but mostly, sunny side up or scrabbled with salsa and cheese.

In diners with breakfast specials of the "2 eggs any style", I will always go with fried over easy. I'm also very fond of omelets, but there I think I'm more interested in the filling. The egg is just a thing to hold it all together.

When making for myself and/or my wife I'll generally go with one of those two styles, though for some reason I've never learned to flip a fried egg without breaking it at least half the time.

For a special occasion I've been known to poach eggs and make 'em Benedict. I can do a pretty decent hollandaise.

Just go sunny side up, if you don't like a runny yoke cook them over med-low heat and cover in a 8" sauce pan preferably in a little butter (like a pat) it's I think easier than over easy and you can control the thin or thickness of the yoke better.

Eggs Benedict is high on my list, I use country ham since it's easier to get than Canadian bacon around here.

MMMMMM, eggs benedict.  I am so hungry it is killing me.  We just finished dinner.  I enjoyed my white rice and smattering of peas, but I need my digestive system to get better soon.  These discussions of food that I cannot have are cruel and unusual punishment.

I like hard-boiled eggs and especially fried ones. I hate scrambled eggs. They remind me of spilled brains.

I enjoy an omelette almost exactly as Andrew described above. Mostly, I like my eggs fried over easy, with a generous sprinkle of salt and pepper. Yolk needs to be dippable, but the white must be firm. Nice with toast, bacon, hash browns, occasionally sausage, and toast.

I'll occasionally do the eggs over hard if I want to make a fried egg sandwich. And I did actually once try the fabled triple fried egg butty with chili sauce and chutney.
