You know the ones; they'll never be A-listers or get GQ covers but every director seems to have them on call.  Who are some of your favorites?
A few of mine:

Clifton Collins, Jr.

MO: Hooligan
Where you've seen him: TIGERLAND, TRAFFIC, SUNSHINE CLEANING, BOONDOCK SAINTS II: ALL SAINTS DAY, THE LAST CASTLE, CRANK: HIGH VOLTAGE, SCOTT PILGRIM VS. THE WORLD, EXTRACT

Reg. E. Cathey

MO: Token Black Guy

Fire walk with me

Bushma

Al Leong

You know him. He's the guy you call when you need an Asian Guy, especially if you need a bad guy.

This is my awesome signature.  Jealous?

HappyGilmore

I'd consider Steve Buscemi a 'that guy' actor. He's got a boatload of credits, including starring on a hit HBO series, yet nobody knows his name.
"The path to Heaven runs through miles of clouded Hell."

Don't get too close, it's dark inside.
It's where my demons hide, it's where my demons hide.

Michael Berryman is hard to miss

Bruce Spence also gives me a chuckle whenever I see him on screen:

looks a bit like Bez from the Happy Mondays

Mofo Rising

For some reason or another, a while back I decided to make it a point of pointing out Frank Whaley whenever he showed up on anything.

No particular reason, other than I think it's funny. I actually think he's a pretty great actor, just never seemed to hit it big. His "break" role was acting oppositte Jennifer Connelly in the not-so-compelling Career Opportunities. It didn't pan out, but I recommend watching that movie if you have any interest in seeing Jennifer Connelly riding one of those cheap rides in front of grocery stores.

Also, he got shot at the end of the iconic "Ezekiel 25:17" speech in Pulp Fiction.
Every dead body that is not exterminated becomes one of them. It gets up and kills. The people it kills, get up and kill.

Derf

Irwin Keyes, less because he's been in a boatload of movies, more because he was a very nice guy when I met him at a con. Except for the whole trying-to-kill-me thing.  :teddyr:

Although he finally got a leading man role (Machete), I'll include Danny Trejo here, too: the badass Mexican in many movies.
"They tap dance not, neither do they fart." --Greensleeves, on the Fig Men of the Imagination, in "Twice Upon a Time."

He was quite effectively creepy in VACANCY.

Another "we need a menacing Asian" guy:  Cary-Hiroyuki Tagawa

Buck Flower has an impression list of 155 acting credits.

Professor Hathaway:  I noticed you stopped stuttering.
Bodie:      I've been giving myself shock treatments.
Professor Hathaway: Up the voltage.
