Cows spend their whole lives eating vegetables.  Their body removes all the bad stuff from them and then uses the best part of the veggies to build muscle tissue, which I then grill and eat.  Eating beef is simply a more efficient means to eat all the greens you need.

I used to hate all veggies except potato chips, french fries, tater tots and ketchup. Sometimes I'd make a meal of all 4 mixed together. Then I had the diabetes AND the heart surgery and since I've learned to enjoy eating my way through theplant kingdom. I still eat meat, but not nearly as much, and if I eat white potatoes it's always with some kind of high fiber-low glycemic veggie like broccoli or cauliflower in order to keep my sugar low. I changed my ways while I was on the operating table, but it took me quite awhile, a month or more, before I actually started to like my new diet. After awhile I did feel better. lost weight, felt more energetic, all the stuff say will happen if you eat more vegetables.  And when I do eat meat, which I still love, I can't eat as much as I used to eat. Used to chow down a 20oz prime rib, toss the baked potato and eat another prime rib for dessert. Can't do that now, my body doesn;t like it anymore. Now I'm happy with a 10oz cut of something leaner.

So basically I eat any vegetable anytime anywhere. I like them all except radishes. Summer salads are great.

I usually regularly eat potatoes, corn, broccoli, lettuce, tomatoes, and onions.  I try to eat potatoes with dinner, depending on the meal.  Usually for lunch I have a Chicken Ceaser Salad, so I get a good mix of poultry with my vegetables there.

Sometimes what I like to do for dinner, is make a side dish of rice, but chop up some celery and onions, then throw them in the pot, then add a pinch of salt.  Gives it that nice kick for taste instead of just plain rice.
