Not really a cameo, but Gene Hackman's portrayal of "The Blind Hermit" in Young Frankenstein.  That part is my favorite one in the whole film.  Gene Hackman's role was uncredited when the film was originally released.

Well, the original post specified those really quick, non-speaking cameos that flitter by but are there just long enough to be fully recognized. In which case, I still go with my contribution: the bouncing breasts in Airplane. Awesome quick cameo. Who was that actress?  :buggedout:

Seriously, it seems to be unknown.  I've listened to DVD commentary and read on IMDB, so far no idea.
