Just finished some Thai Beef Pad Med, with supra-hot red chilis called "Thai chilis..." a condiment in fish sauce; makes your tongue burn and eyes water.  Beef Pad Med: thin slice lightly dredged, with green pepper, onion, cashews, light brown sauce... added green "long chilis" pickled in vinegar too...    Pinot Noir
