Apparently, April is National Grilled Cheese Month. All hail the cheese!

What a coincidence. I just made grilled cheese for lunch today, for the first time in a while.

I was reading up on various blogs and message boards regarding grilled cheese. Quite interesting how people prefer to make or eat them.
Surprisingly, many like to press the sandwich with a spatula while its grilling on high heat, out of lack for patience. That's how I used to make them when I was a kid.
Pressing damages the crispiness and makes the cheese squirt out, and there is a greater risk of burning the bread when grilling on high heat.
I prefer the tender crunch of a properly grilled cheese. I do not press.
Stove top on low heat, butter in the iron cast skillet, then I add two slices of bread topped with cheese, and two slices of buttered bread on top.
After that I cover the skillet and let it grill for about 8 minutes or longer, or until golden brown. Then I flip the sandwiches on medium heat and grill for another 4-5 minutes or until golden brown. Viola! The perfect crunchy grilled cheese sammich :)

Definitely can't rush a good grilled cheese. I find that keeping the stove on the low side of medium produces a nice, uniform golden-brown colour and crispness. And the cheese is properly melted.

As far as making the sandwich, I use the method my mom used. Butter two slices of bread and set them with the buttered sides together. Put cheese on top, then lift the top slice with the cheese and set it in the pan butter-side down. Set the remaining slice butter-side-up on top. Actually, I tend to prefer margarine over butter for grilled cheese. I've used a variety of cheeses, but I think processed cheese might be my favourite for grilling, by a small margin.

And the best way to eat it? Cut in half diagonally, put some ketchup on the side of the plate and dip.

OK, now I know what I'm having for lunch again today. :teddyr:
