I'm playing Persona Q right now. There's a respawning subboss that's usually really tough (Post 3rd dungeon) and gives good EXP. However the only types of attack it has involve fire and dark attacks as well as abilities to petrify or curse me. By default my character is immune to dark so I got a Persona immune to fire, petrification, and curse. Now I just hit the rush button and wait.

Playing the original DARK SOULS and  killing Smough and Ornstein on my second try.
Many considered them the hardest bosses in the whole game!

In Legend Of Zelda: Link's Awakening for the Game Boy you could move off a screen JUST as you press the Map screen button and you'll suddenly appear on the opposite side of the next screen when you returned to the game.  A good way to bypass difficult enemies but you can get stuck too.
