System Shock 2 - Kickass scary action sci-fi. Would be especially cool if they made all the audio logs into sub-plots. I would definitely love to see the security forces last stand...

Grim Fandango - Excellent film noir. Would have to be Toy Story / Shrek style CGI though.

Realms of the Haunting, Bionic Commando, Tetris...

Halo? Marathon is a better game, although it would be a hard movie to make.
Also, a great movie could be made of Castlevania.
